Hen eggs, a.k.a. chicken eggs, are the most commonly consumed eggs in America, but not all eggs are the same. Depending on the type chickens and the way they are raised, quality can vary greatly. Choose free range eggs whenever possible, as hens who are able to roam freely and forage in a natural habitat with exposure to natural sunshine will greatly benefit their eggs.
Eggs can vary in color, too, and that’s a very nice thing. We once encountered a farm stand in Wisconsin where the owners showed us their different colored eggs for sale and said it was because they had ordered chicks from South America who grew up to be hens producing pink, blue and pasty white colored eggs. In the end, the truth is told in the yolk- if it’s bright yellow, that typically means it’s a healthy egg and highly nutritious. Discard eggs with spots of blood in or around the yolk.
